White Chocolate Blondie Bites
Pre-heat oven to 350 degrees.  Coat 11 X 7 inch baking pan with cooking spray--line bottom of pan with parchment or foil and coat with spray.

1 1/2 cups white chocolate chips
1/2 cup butter--cubed into pieces
1/4 cup sugar
2 large eggs, beaten
1 TBS Vanilla extract
1 1/2 cups flour
1/2 cup tightly packed sweetened shredded coconut
1/4 cup sliced almonds

Combine white chocolate chips, butter, and sugar in bowl and set over pot of simmering water.  Heat until melted and smooth.  After cooking chips, butter, and sugar for 5 minutes, stir in eggs, vanilla, and then flour.  Fold in coconut. Pour batter into prepared baking pan.  Sprinkle almonds on surface and bake 20-25 minutes or until top is golden brown and toothpick inserted in center comes out clean.  Cool completely until cutting into 24 squares.
